Chili Dhokla - Traditional Dhokla With A Twist


Here comes our very own gujarati dhokla in a different style tossed with chilies. Chili dhokla is a traditional dhokla recipe with a twist of dhokla with green chilies and capsicum.

Ingredients For the Recipe of Chili Dhokla

Rice- 3 Cups
Split Black Gram Skinless (Dhuli Urad Dal)- 1 Cup
Yogurt- 1 Cup
Green Chili- 1 Tbsp (Grounded)
Ginger- 1 Tbsp (Grounded)
Salt to Taste
Garlic- 6-8 Cloves (Chopped)
Onion- 1 Large (Chopped)
Green Chilies- 6-8 (Sliced)
Green Capsicum- 1 Inch Cubes
Chili Sauce- 1 Tbsp

/> Corn flour/Corn Starch- 1 Tbsp
Soya Sauce- 1Tbsp
Black Peppercorns- 1/2 Teaspoon (Crushed)
Spring Green Onion- Chopped Sprigs a Few

Method of Preparation of Chili Dhokla

Combine rice and urad dal and grind them dry to a coarse powder. Empty this powder in to a large vessel and add yogurt along with a little warm water. Mix it well to make a thick batter. Cover this batter tightly and leave it to ferment for at least twelve hours.
Now add the grounded chilies, ginger and salt to it. For making chili dhokla add cooking soda mixed with two tbsp of water to the fermented batter and mix gently. Grease the dhokla platter or a thali and boil water in the steamer/boiler. Pour two to three ladles full of batter into the greased thali, spread it

well and steam it in the steamer for eight to ten minutes. After ten minutes check the mixture of chili dhokla by putting a knife in it. If knife comes out clean, it is cooked. Keep it aside and when it comes to room temperature cut into one and a half inch sized cubes. Heat sufficient oil in a kadai and deep fry dhokla cubes till it turns golden and crisp. Drain dhokla cubes onto an absorbent paper and keep aside. Heat one tbsp of oil in a pan or wok, add chopped garlic and stir fry, add chopped onion and sliced green chilies. Carry on stir-frying for a couple of minutes.
Add capsicum and keep stirring. To make chili dhokla mix together soya sauce, chili sauce and cornstarch and add it into the pan. Add crushed peppercorn and fried dhokla. Cook on high heat for a minute tossing constantly. Serve chili dhokla hot garnished with chopped spring green onion.
