Crispy Bread Cups

This bread delight is tasty, as well as calcium rich and can be served as appetizers to a main meal.

Preparation Time: 15 Min
Cooking Time: 25 Min
Baking Time: 15 to 20 Min.
Bake at Temperature: 200°C (400°F).
Makes 8 servings

INGREDIENTS

For The Toast Cases

Whole wheat bread- 8 Slices
Butter- 3 Tbsp (Low fat)

For Filling in the cups

Corn - 1 1/2 Cups (Cooked)
Onions- 2 Tbsp (Finely Chopped)
Capsicum-2 tbsp (Chopped)
Green Chillies- 2 tsp (Finely chopped)
Milk- 1 cup (Low fat)
Corn flour- 1 Tbsp
Oil- 1 Tbsp
Salt to taste

For Baking

Processed cheese- 4 Tbsp (Grated)

Steps of Preparation

 

For the toast cases

Remove the brown sides (crust) from the bread slices.
Wrap the slices of bread in a muslin cloth carefully and steam them for 5 to 7 minutes in a pressure cooker.
Grease muffin tray with butter.
Roll out bread and press the slices into the cavities of a muffin tray. Brush the bread slices with melted butter and bake in a hot oven at 200°c (400°f) for 10 minutes or until crisp.

For

the preparation of filling

Heat the oil in a non-stick pan, add onions and sauté till they are golden brown or properly fried.
Add the green chillies and capsicum and fry for 1 minute.
Add milk, corn, corn flour, salt and mix it well. Cook till the mixture thickens.

For Baking

Fill a portion of mixture in each toast case, sprinkle some cheese on top. Bake in pre-heated oven at 200°c (400°f) for 5 to 10 minutes or until the cheese melts.
Serve hot.
